How To Build A Gingerbread House From A Box With EncinoMom's Lisa Keating

This video has been moved, to view click the link below.
http://encinomom.com/how-to-build-a-gingerbread-house-from-a-box/
Start your own holiday family tradition with this easy to build gingerbread house kit from Germany. These abundantly available kits include everything except an egg white and a few drops of white vinegar. Of course, you could make the whole thing from scratch, but that's another video! This is so much fun to do as a family project and a real treat around here, since cooking with candy is extremely rare.

These kits start showing up in stores before Thanksgiving and can be a lot of fun to kick off holiday decorating and involve a variety of generations in an activity besides watching the parade. I bet you could even do it with the parade or the game on in the background. I suggest having grandma take the kids to pick out the extra candies for the trim. You'll be really surprised by what they bring back from the store after an hour or so with your kids!

Thank you so much for watching. Wishing you hours of simple pleasures this holiday season and throughout the coming year. :)

How To Cook A Turkey. Best Ever Turkey Recipe from EncinoMom

How to cook a turkey. Best ever turkey recipe adapted after many years of trial and error (oh, the errors!). Make this your best Thanksgiving yet, with this tried and true turkey recipe.

This turkey recipe from EncinoMom serves 6 to 8 people and takes approximately 3 1/2 hours. I cook my turkey unstuffed. Here's what you'll need: 1 turkey, 14 1/2 lbs., 1 orange, 10 Tablespoons unsalted (room temp) butter, 2 Tablespoons Molasses (I use Black Strap), 1 Cup of Red Wine with a little water in it, 1/4 Cup of Kosher Salt, 2 springs fresh sage, 1/4 Cup coarsely ground black pepper, 2-3 teaspoons fresh squeezed lemon juice.

Preheat your oven to 350 degrees. Use a fork to combine 8T butter, molasses, salt and pepper and lemon juice. Set aside.

Rinse turkey, remove gizzards, pat dry. Rub mixture between skin and meat, being careful not to pierce the skin. Any extra goes inside the cavity with the whole orange (I usually poke a few holes in the orange to release some of the juice).

Rub the skin on the outside of the turkey with the remaining 2 T of butter. Place some of the sage leaves between the skin and the breast meat. I like to arrange them in a sort of chevron pattern which looks beautiful when the turkey is finished cooking. Any extra sage goes in the cavity with the orange.

Put the turkey on a rack in a roasting pan. Pour the wine over the bird. Cook 1/2 hour breast side down, 1/2 hour more breast up (to brown). Tent loosely with foil and baste during remainder of cooking time. Serve with grapes. (Make sure to let the bird rest for about 10 or 15 minutes before carving.

This makes a succulent, beautiful turkey with exceptional flavor. Happy Thanksgiving.

Halloween and lawn reseeding coincide! Here's a fun way to keep the kiddies out of your fresh terra infirma. This seems to help keep the birds from eating all your lawn seed, too. Unfortunately, this has no affect on rampaging raccoons rooting for grubs. Urrrg. Well, I guess you can't win 'em all, but you can have fun trying. :) Happy Halloween, from EncinoMom.

Baking Bread and Making Beds

Herb crusted salami, home made, whole wheat sourdough with grainy mustard, home grown tomatoes, a bit of cambonzola cheese, cornichons and a glass of cool rosé by Chateau St. Michel.

When I find myself in the midst of a day of domesticity, I feel the connection to all of the mothers that have gone before me. Making beds. Fluffing pillows, smoothing little wrinkles away with a sure hand and tucking a little love under the covers as I go. My mind wanders to the sun-dried sheets of my childhood. My own mother would sprinkle a little baby powder into the mix. There's something so utterly comforting about sliding into a "made just for you" bed at the end of a well spent day - or for a delicious nap in the warm golden glow of an afternoon.

I really wanted to add the scent of freshly baked bread to this particular bed-making morning. This is so simple and satisfying I just had to share it with you.

Heat your oven and pans to 425˚. I use my enameled roaster with a small rack and stoneware bar pan inside. I heat the whole shebang - even the lid. (The dough will hold its shape, even on a cookie sheet, but you need to cover the loaf during part of the baking time.)

Then it's 3. 2. 1. Three cups of flour, I use whole wheat. Two cups of water and 1 cup of sourdough starter* (room temperature). I also add two teaspoons of salt and melt a couple of tablespoons of butter on the stove top while the oven heats.

Mix the salt into the flour. Add the water and starter. This will make a heavy, sticky dough. Do not over mix or knead the dough, if you do your bread will become tough. As it is, this bread is very dense and hearty. Fold the dough from side to side, turn 90˚ and repeat. This will give your loaf a nice shape. Don't worry about doing it right, it just needs to fit your pan.

Get your hot pads and take your pan from the oven. Flop the dough over into the hot pan. Pour the melted butter on top (if desired). Pop the bread into the oven. Set the timer for 20 minutes. When the timer goes off, USE you oven mit to put the lid on the roaster. This will keep your bread baking without burning. Bake 15 to 20 minutes more.

*If you don't have a starter in your fridge, you can make your own in a clean glass jar with 1 cup of warm water and 1 cup of flour. For complete details, check out http://www.io.com/~sjohn/sour.htm. My starter is about a year old. This website was the main source I used to get my own starter started..

My family ate the whole loaf between dinner and breakfast, with only this crusty bit left for my lunch the next afternoon. Enjoy!
